The night harvest, carried out in mid-September, takes place when the grapes have reached full ripeness.

Taste: Dry, balanced, and persistent, with excellent harmony between aromas and flavors, good structure, and pleasant sapidity.
Pairings: Ideal with boldly flavored dishes, both fish and meat. Also excellent with aged cheeses.
